Jennifer Collins appointed head chef at Sally Abé’s Westminster restaurant The Pem

Jennifer Collins has been named as the new head chef at Sally Abé’s Westminster restaurant The Pem.

Collins, who holds a Royal Academy of Culinary Arts diploma in professional cookery, joins the restaurant having previously served as senior sous chef at Santiago Lastra’s Mexican fine dining restaurant KOL in London’s Marylebone.

She replaces Laetizia Keating, who is understood to have left The Pem last year prior to it undergoing a three-month refurbishment that saw a new kitchen installed​.

“This opportunity is not just a career milestone for me, but a chance to craft culinary experiences that resonate with passion, creativity, and a dedication to delighting our guests,” says Collins.

“I was drawn to The Pem because of its values and feminist ethos and look forward to leading an amazing team and bringing a new chapter of culinary excellence to The Pem.”

Named after Emily ‘Pem’ Davidson, the suffragette who fatefully ran in front of King George V’s horse in 1913, The Pem opened in July 2021 and was named was named One to Watch at the 2022 National Restaurant Awards.

It is currently ranked at number 97​ in the list of the UK’s Top 100 Restaurants.

“She brings a wealth of experience and I have no doubt that her unique blend of skills and expertise will flourish in The Pem's kitchen. She has a great attitude and focus that will be invaluable for the next stage of our wonderful restaurant as we launch into the new year.”

Collins' CV also includes stints at Luca, where she worked as senior chef de partie; Jason Atherton’s City Social; and Hotel Café Royal.
